
Wolfe Witham of Wolf Brewery was
particularly pleased to reach the
final of the SIBA 2008 competition
with Coyote, especially as the
company has just finished the
enormous task of moving site,
converting a “pretty disgusting”
meat rendering plant into a suitable
place for a brewing and commissioning
an entirely new brewery. In
total it took about six months.
“Most of the credit should go to Head
Brewer Derek Dunstan for making it all
work but equally so to Paul Kerridge
(second brewer) because he has got the
beer back to its original standard, when
we swept the boards at the 2005 competition,”
saysWolfe.
“No mean feat since this plant is
completely different to the old one. For
those interested I would like to pay a
personal tribute to DME and their staff,
who though thousands of miles away
were always at the end of a phone or
email to deal with any problems -
something many British companies seem
unable to do!
“The quality of the DME plant is without
question. It does what it says on the tin!
Whilst handing out the plaudits I should
also mention Peter Kerr of ABUK who
helped it to happen and convinced some
wily Old Norfolk boys that it was
worth buying a new brewery rather
than building one out of wattle and
daub which is the more usual way.”
